Grain-free Pesto Crackers

Inspired by a fellow Son-Rise mom and wonderful friend of mine, this recipe is a power snack!  Filled with lots of protein and greens, Grain-free Pesto Crackers are for those picky eaters that crave carbs but are not too excited about veggies or greens.  Everybody knows that vegetables are very nourishing to the body.  Green plants are rich in chlorophyll, which is know to oxygenated and detoxify the blood.  They are also a great gut healing food and the good bacteria in the gut loves it! So eating greens is a great way to keep them happy since their existence is key for a strong immune system.  If you have a hard time getting greens into your diet, this is a great and fun way to eat them.  In this recipe I made sure to incorporate healthy fats from olive oil and seeds which are very nourishing and great anti-inflammatory food.  I also add garlic, one of the cheapest and most natural antibiotics and antihistamine foods you can find!  They come out so pretty, they are great to be served as an appetizer for when you have last minute company coming over.  We just had a playdate the other day with other delicate belly kiddos and they loved it!

Grain-free Pesto Crackers

Feel free to get creative, adding any variety of greens if you like.  For this recipe I use Cappello's Lasagna noodles as my crackers, but you can use my Egg-Free Paleo Pizza Crust recipe as well.  You would just use a roller and spread the dough a little thinner and cut them up into 2x2 inch squares.  I also make sure to soak and dehydrate my seeds to remove anti-nutrients and aid in digestion.

  • Prep Time : 10 minutes
  • Cook Time : 15 minutes
  • Yield : 20 crackers

Instructions

  • Pre-heat oven to 350F
  • In a food processor add all the ingredients and process until smooth (1-3 minutes)
  • Add parchment paper to 2 cookie sheets and lay Cappello's Lasagna noodles or pizza crust and cut into 2x2 inch squares.
  • Cover with a generous layer of the pesto.
  • Bake it for 15 minutes.
  • Serve!
