Paleo Pork “Tacos”

Carly Fleischmann is an amazing young adult with Autism that has been non-verbal all her life.  She has gross motor challenges, which makes it difficult for her to control her body.  Due to her difficulties moving through space and communicating, her behaviors can appear very erratic at times. One day Carly was in desperate need of help.   Her therapist didn’t know what was going on as she ran around the house grunting uncontrollably.  She finally had the idea of sitting in front of the computer and managed to type the words “tooth hurts”.  This was a big surprised to her parents and therapist.  They had no idea Carly could understand the world around her, much less read, write or operate a computer!  Since then she began typing complex thought, feelings and ideas in her computer for the hole world to see.  Her breakthrough has help people across the world understand what it is like to be severely Autistic.  This is what Carly has to say about picky eating in the books that tells her life story:

“A lot of times when autistic children and adults eat food, we have a hard time with textures and smells. It can be a little over barring some times. We block these things out buy adding dips to mask the problem. I like dipping my pizza in mustard and at camp I dip my food in ranch dressing.”

This idea was so eye opening to me and to lots parents dealing with children with oral sensory challenges.  My picky eater is not a dip guy, but he loves crunchy food.  One day we decided to make tacos.  I thought I would try lettuce wraps as a taco shell substitute since they are so crunchy and we are not ready for grains yet.  Through Carly’s explanation I understood that to my kid, looking at a plate of food was very overwhelming.   Thanks to our healing diet, this issue is not as pronounced these days.  My picky eater will try anything, although there is still some anxiety at mealtime.  Guess his surprise when he realized he could put his meal in the lettuce wrap, close it up and eat it.  He was so excited all the stress melted away and he ate every bite of his dinner.  This was my inspiration for Paleo Pork “Tacos”.  They are delicious and my picky eater can’t get enough of them!

Paleo Pork

I wanted to make this recipe super easy and quick to make.  If you want some extra filling in your "Taco", you may add 1/2 of a large onion chopped and brown it with the pork and spices.  So yummy!

  • Prep Time : 10 minutes
  • Cook Time : 15 minutes
  • Yield : 4-6 servings

Ingredients

Instructions

  • In a cast iron skillet, add meat and spices combining well.
  • Brown meat fully in medium-high heat.
  • Add Coconut aminos, apple cider vinegar, fish sauce and  lemon juice.  Combine ingredients well.
  • Cook until all liquids have evaporated (approximately 10 minutes).
  • Turn off the heat and add the cilantro.
  • Add pork to the lettuce wraps as you serve.
  • Enjoy!
